Directions:
Preheat oven to 350 degrees. Butter a 3-inch muffin pan generously
or place muffin papers each hole. In
a mixing bowl, combine pumpkin, vanilla, eggs, oil and sugar. Sift flour, baking powder,
soda, cinnamon and salt. Combine wet and dry ingredients together and beat until smooth. Add raisins.
Pour batter into greased muffin tin or muffin papers, filling each cup 2/3 full. Bake for 30 minutes until
lightly browned.
